The Phat Vegan: Wheat Free Chocolate Chip Cookies

Being Vegan and quite healthy, I was asked to share some of the items that I eat. I am 6'4" inches tall and maintain a weight of 220 - 230 lbs. and it is not easy keeping this body style :) I am quite active but at the same time, I enjoy putting in some couch time and enjoying a snack here and there.

Krista, my better half, took the reigns years ago to make sure that we eat healthy while at the same time we get to enjoy some junk food. Here is one of our favorite cookie recipes. It is also wheat free for those with allergies. Enjoy!

Wheat Free Chocolate Chip Cookies

Prep time: 8 minutes | Cooking time: 10 - 12 minutes | makes 18

These cookies couldn't be any easier to make, unless you had someone else make them for you. If you don't need them to be wheat free you can substitute oat flour with regular flour. You can also sub the sugars for and dry sweetener of your choice (Florida crystals, sucanat etc). Oh and by the way, they are yummylicious!


Equipment:
1 small mixing bowl
1 medium mixing bowl
wisk or fork
baking sheet or two

Ingredients:
1 3/4 cups oat flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup sugar brown sugar
1/2 cup sugar
1/3 cup canola oil *or* melted margarine
1 Tablespoon flax meal
1/4 cup soy milk
1 teaspoon vanilla
3/4 cup chocolate chips

Directions:
Preheat oven to 375 F.

Sift together flour, baking soda and salt.

In a small mixing bowl, whisk together flax meal and soymilk. Add sugar and stir, add oil and vanilla and whisk vigorously until all ingredients are emulsified (about a minute).

Mix wet ingredients into dry, fold in chocolate chips.

Drop batter by the tablespoon onto ungreased baking sheet, leaving and 1 1/2 inches of space inbetween cookies.

Bake for 10 -12 minutes. Remove from oven and let cool for a bit (5 minutes). Using a spatula, put them on a cooling rack or plate to cool the rest of the way.
